Chicken Parmesan (Athena style) & Review on Garden Burger Riblets

I saw a recipe online for chicken parmesan but I decided to change it up a little. Here's the recipe: (This will feed 2 people or 2 meals)

I cooked 2 chicken patties(Morningstar Farms Orig.) (1 for one meal, 1 for another)

2 slice of swiss cheese

Opt. can add shred. Mozzarella but I didn't

Spag. Sauce I used the whole jar of a garden variety

Was in the mood for more veggies so added 1 squash, sliced, steamed in a steamer bag (If making 2 meals cook one more squash)

Opt. Can add 1/2 c. Parmesan cheese

I used wheat spiral pasta but you can use any pasta you would like

Cook the pasta accord. to the directions. While that is cooking cook the chicken patties.Microwave the sliced squash in steamer bag. When pasta is done drain and put on plate.Warm spag. sauce. Layer pasta, sliced squash, 1 chicken patty, cut into pieces, spaghetti sauce, and 1 slice of swiss cheese, pop it in microwave to melt cheese. Ta-Da!

On Vegan Lunchcast I had read he had took this to work with him one day so I decided to try it. It was good!! He had said if you like Mcdonald's riblet sandwich you would love this!! I agree!! I will not eat McDonalds meat version ever again!! Give it a try! I'm loving how these meatless versions of my favorite foods are so good and I don't even miss the meat versions.

Banana Black Beans


This combination might sound a little weird but it's really quite delicious.
It's also superquick! Here's the recipe:
1 can black beans( I used seasoned blackbeans)
1/2 c. coconut milk
1-2 banana's, chop. into small pieces.
2 stalks, grn. onion, chop
1 tsp. chili powder
Drain blk. beans. Then put in a lg. bowl. mix the coconut milk in with the blk. beans, add grn. onion, chili powder and if you want the bananas (you might want to add the bananas later to make sure doesn't get mushy)
Warm the mixture til heated through. Serve on a bed of brown rice. It's so yummy!! This recipe was also a vegweb creation.

Garbanzo Tacos


I love these tacos!! I don't want to eat tacos the other way ever again!!! No more mystery meat for me. yuck! I have these almost every other week.
Here's the recipe :
1 can of chickpeas, drained
shredded lettuce
Hard taco shells
salsa
sour cream
(opt.)I used some matchstick carrots I found in the produce aisle
Lemons
1 tsp or more taco seasoning
shred. cheese
couple of grn. onions
I only have a mini chopper so this is how I do it. Put some of the chickpeas in the chopper w/ some lemon juice, taco seasoning, and grn. onion. whir it til it is the consistency of refried beans. taste if need more j. or taco seasoning add. *I have to do this a little at a time :(
Cook taco shells. now layer chickpea mixture, lettuce, carrots (if using) salsa, cheese and sour crm. Yum!!
I got this recipe from vegweb. I have been waiting weeks to put this recipe on!

Mexican Tortellini


I made Mexican pasta today. I got this recipe from Vegetarian Times Magazine. I will make this again! I had to modify it some because I realized too late I didn't have any chili powder oops. Here's the recipe:
Ingred.
1 tsp.chili powder *(I used taco seasoning)
frsh sliced mushrooms or 1 sm. can sliced mushrooms
It asked for taco seasoned soy crumbles but I didn't use
Shred. Cheddar cheese(lowfat) Or my preference *Monteray Jack cheese
1 pkg. 3 cheese tortellini
6 plum tomatoes *(I used 1 can diced tomatoes)(coarsely chop.)
1-2 tbsp.Veg. oil and diced garlic(I didn't use)
Cook pasta accord. to directions. Drain. If using the garlic saute' in veg oil
for 30 sec. and add tomatoes & chili powder.* ( I added some j. from canned tomatoes( just a little) and drained the rest of the liquid. Added drained canned mushrooms and added some taco seasoning and heated the tomato mixture) Cook the tomatoes & chili powder for 5-8 min.
remove from skillet. Add mushrooms and soy crumbles. saute 2-3 min. Stir in tomatoes and cheese, cook stirring often, 5 min more. Top pasta w/ soy crumble sauce.
*topped pasta w/ tomato mixture and added monteray Jack cheese. *

A little bit of this & a lit bit of that

Today's blog will be about a couple of things but sorry no recipe. Originally I was going to make Sw and sour chicken (using meatless chik'n nuggets of course!) Well I read the label on the sw and sour sauce and found a gross ingred. It contained Carmine ewwww If you don't know what it is it's basically ground up beetles. They use this as a coloring ingredient in many foods including yogurt, juice drinks, and other foods you have no idea it's in there. Un-Chicken Pot Pie


I saw this recipe at http://www.bocaburger.com/ and I just had to try it. It was very good and this is one of my most favorite meals now!! So Yummy!!
Here's the recipe for Un-Chicken Pot Pie
2 Boca Original Chik'n Patties
1 can veg-all
1 can condensed cream of celery soup
1/4 c. water
blk. pepper
1 pkg. ready to use pie crust(one with 2 in it)
shredded cheese(opt.)
Preheat oven to 400 f .
Cook the patties for 1 min in the microwave just enough to get them soft so you can cut them into pieces.
Mix all ingred. except pie crusts til well blended. (I used about a handful of cheese also) Add all of the vegetable mixture to one of the pie crusts. Cover w/ remaining crust(You'll have to let the crust dethaw some to get it soft) Once it's soft seal and flute edges. Cut several slits in top crust to allow steam to escape. Bake 30 min.
P.S. If anyone knows how to stop pie crusts from getting overly brown please let me know. I've tried everything and it nothing works.
